About 10pm last night as I was cleaning my kitchen from Easter food prep I had the thought, how it would be nice to bring a sweet treat to share after our easter Saturday yoga class.

I had a few specific ingredients that I wanted to use up; Raspberries and macadamia nuts. When I couldn’t find a recipe to fit I decided It was going to be one of those freestyle occasions. By the end of the making and mixing phase I wasn’t sure how they were but decided it was time to sleep regardless.

This morning the consensus was unanimous, absolutely delicious. This is my new go to truffle for all occasions. It is very simple and easy to make and I think the recipe will be fairly ¬†adaptable to adjustments according to taste and texture preferences. The truffles did firm on refrigeration so don’t be concerned if the mix your balling is very soft and sticky, You’ll just have to lick it off your fingers!

INGREDIENTS
1/2 Cup  macadamia nuts
1 block of loving earth Raspberry chocolate 80gms
1/4 cup fresh raspberries
1 Tbsp rose water
1 Tbsp maple syrup
1/4 cup Cocoa powder
1 Tbsp Shredded coconut
Pinch of salt
Shake of of cardamon
Extra coconut or Cocoa for coating

1) Blend all ingredients in food processor till well mixed.
2) Roll into balls and coat with more Coconut of cocoa powder to coat
3) Set in fridge, or freezer if you need to be quicker, bring back to room temp to eat.
