Good Food and Great Company Nourish the soul simply, deeply and profoundly. Here’s the soup recipe from our regenerative yoga retreat day. Big thanks to all who attended. was such a beautiful day. Remember if you want good energy be mindful of what your consuming!

Soup Ingredients

1 Tbsp Olive Oil
1 brown onion
2 cloves of Garlic
1 tsp of smoked Salt
1 Tbsp of Tomato paste
cumin, Cardamom 1 tsp each
white pepper .5 tsp
If you like spice feel free to add some Chilli too
1 Cups of Red Lentils
1/3 Cup of Dried apricots sliced
1 Carrot
1 tspn Onion flakes
1 Tbsp of Tomato paste
1 tsp of smoked Salt
cumin, Cardamom 1 tsp each
white pepper to taste .5 tsp
1 Tbspn of yeast flakes
4 cups vegetable broth
1 Tbsp of fresh thyme
1 tin of cherry tomatoes
1 Tbsp lemon juice.

Optional parsley ans fresh cherry tomatoes to serve

 

Soup Instructions

1) heat 1 Tbsp Olive oil and fry onion for 7 mins add garlic and cook for 2 more mins

2) Add Salt and spices, tomato paste, Onion flakes and yeast flakes cook stirring constantly for 2 minutes so the tomato paste darkens and gets a bit jammy.

3) Add the red lentils, dried apricots and carrots, stir everything through till well mixed.

4) Add Water bring to boil and cook for 20-25 minutes. keep stirring every 5 minutes of so and add water as needed to obtain desired consistency.

5) I Blended 1/2 the soup at this stage completely optional but can give a smoother texture.

6) Add tin of tomatoes, thyme and lemon juice and simmer lightly for 10 minutes. Taste and add more salt or seasoning if required.
